A super-simple recipe that can be quickly put together using some store-cupboard staples.

Lamb Kofta

Ingredients
  

  • 500g lamb mince
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp cinnamon
  • 2 tsp garlic granules
  • salt and pepper (to taste)

Instructions
 

  • Pre-heat grill to a high heat and combine all of the ingredients by hand in a bowl.
  • Divide the mixture into 8 separate portions – shape into balls, patties or form them into kebabs around a metal or wooden skewer. (If using wooden skewers, be sure to soak them for an hour prior to use)
  • Place your shaped mince under the grill and turning regularly, cook them until they are browned all over.
  • Serve with a red onion and cucumber salad with rice or flatbreads.
